489 g. Freshly cut tidbits pineapple
269 g corn kernel
red & green bell pepper
1/2 cup Mayonnaise
255 g. tuna in brine
pepper & salt
Diet condition: basic foods
Nutritional info: Good for the eyesight

Combine all ingredients. Toss lightly.
Chill before serving.

Oatmeal Cookies with a Twist of Fruit

Instructions |
3 cups oatmeal
1 cup splenda
1 cp brown sugar packed
1 tsp baking soda
1 tsp vanilla or extract of your choice
2 sticks of butter or margarine
2 eggs
1-2 cups chocolate chips
add 1 banana
1 16oz can of pears drained
1 apple cut into small pieces
1 1/2 cups flour
Preparation time: 10-15 minutes depending on how
clients like their cookies
Number of servings: 6
Diet condition: Healthy for heart
patients, hypoglycemics and patients who skip meals |

Mix ingredients together
and spoon onto cookie sheet this is a very healthy dessert
or snack when clients don't/won't eat.

info:
Since some clients don't like to eat, sometimes the cookies
could be used as a replacement considering the fact the you
are using oatmeal, and three different types of fruit and
you are also omitting a lot of the salt for patients with
heart problems. You could even omit the baking soda if needs
be. The client won't miss it. |
